Celebrate Chocolate Covered Cashew Day With A Batch Of Healthy Sweet Cashew Cream!

I love cashew nuts and I love chocolate but, in the interest of trying to celebrate with a healthier alternative, I came across many recipes for cashew cream.  Cashew cream can be used in both savory and sweet recipes. I wanted dessert so I made a batch and used some as a topping for a bowl of berries. The recipe couldn’t be simpler!

Recipe for Sweet Cashew Cream

Sweet Cashew Cream

Ingredients

  • 1 cup raw, unsalted cashews
  • 1/2 - 3/4 cup water (depending on desired consistency)
  • 1/8 tsp kosher salt
  • additional water for soaking the cashews

Instructions

  • In a bowl, cover the cashews with water and soak for about 3 hours.
  • Drain and rinse the cashews. 
  • Place the cashews, water, and salt into a food processor or blender. Process or blend the cashews until smooth and creamy (approx. 1 - 2 minutes).
  • Stir in desired sweeteners such as vanilla extract, liquid stevia, sugar, or maple syrup to taste. Blend again.
  • Pour into another covered bowl or container and chill in the refrigerator to thicken. Cashew cream will last for approximately 5 days in the refrigerator.

 

I added some chocolate stevia to the cream since it is National Chocolate Covered Cashew Day after all!

Here are some fun facts about cashews:

    • the cashew nut is actually a kidney-shaped seed that is contained inside the fruit of the cashew tree, native to South America
    • the raw cashew is naturally green in color
    • cashews are related to pistachios, mangos and poison ivy
    • cashews are always sold shelled because the seed is surrounded by a toxic shell that contains a caustic resin which is actually used in industry to make varnishes and insecticides

If you don’t feel like making cashew cream, pick up your favorite chocolate (milk, dark, white) and some cashews and make your own candy or buy a bag of chocolate-covered cashews and share with your family and friends. Every day is worth celebrating!
